Ya ya so I am in one of those short-lived “I’m going to eat healthy” phases. Sticking to the theme of quick and simple recipes I’ve been following since last couple of posts, here’s an ultra simple soup that tastes yummy, especially on those wintery nights, cuddled inside a blanket on a bean bag, with a nice book to read.
Spinach(Palak) and onion soup – Serves two
Ingredients
- Spinach – 1 cup
- Onions – 2 large
- Freshly ground pepper
- Salt to taste
- Butter – 1 tsp (optional)
Method of preparation
- Clean the spinach leaves thoroughly. In India, spinach bunches have a lot of dirt and you definitely don’t want the “krrr” sound to ruin the soup. Remove the stems and roughly shred the spinach leaves.
- Peel and roughly chop the onions into quarters.
- Pressure cook the spinach and onions with 4 cups of water.
After two whistles or 7-8 minutes, switch off the gas. - Blend the cooked spinach and onions with a blender, add salt and freshly ground pepper and boil for a minute. Add more water, if required.
